What is Gusano Rojo mezcal?

Gusano Rojo Mezcal is one of the most popular mezcals in Mexico, and is made with 100% agave. Named Gusano Rojo (red worm) after the "worm" that is sometimes found in agave plants used for production.

Since 1932 we have maintained the mezcal tradition in its artisanal process, achieving unique quality and flavor.

Currently, we are a leading brand in the production and marketing of mezcal in Mexico, we export to Europe, South Africa, North America and Central America.

PROCESS

  • 1. CROP

    During the process we select mature agaves aged between 8 and 10 years, which is the ideal age since it is when we find the highest concentration of sugar necessary for our production.

  • 2. JIMA

    In this process we cut the tips of the leaves and then we remove the leaves of the agave until we reach the heart and obtain the agave pineapples, it is here where we find the necessary sugars for its elaboration.

  • 3. COOKING

    We cut the agave pineapples into pieces and place them in a conical stone oven, we make a fire for cooking with mesquite firewood for three to four days, this firewood will help us obtain the smoky flavor of our mezcal.

  • 4. GRINDING

    At the end of cooking, the pineapples are passed to the grinding area, which we crush with a tahona stone and horse until it becomes a gabazo to be able to pass it to fermentation.

  • 5. FERMENTATION

    We place the gabazo in oak wood vats and add well water to start the fermentation process, here the sugars are converted into alcohol through the action of the yeasts, this process lasts from 6 to 12 days, depending on the weather.

  • 6. DISTILLATION

    At the end of the fermentation, we pass the alcoholic juice to distillation, which is carried out twice in copper stills heated with mesquite wood. Once distilled, we remove unwanted alcoholic residues and prepare for bottling and filter our mezcal to remove impurities.

  • 7. BOTTLING

    To bottle, we filter our mezcal to remove impurities and level at 38%. alchol vol
